Inviting Dessert Recipes:
White Vanilla Layer Cake
- 1/2 cup shortening
- 1 cup granulated sugar
- 1/2 cup cold water
- 2 cups flour
- 2 teaspoons baking powder
- Whites of 3 eggs
- 1 teaspoon vanilla or almond extract
Cream shortening and sugar together until very light; add water slowly, almost drop by drop, and beat constantly; stir in flour and baking powder which have been sifted together twice; add vanilla flavoring; fold in whites of eggs which have been beaten until stiff and dry, pour into two greased layer cake tins. Bake in moderate oven 20 to 25 minutes. Put together with fresh strawberry icing or maple icing.
Chocolate Vanilla Filling and Icing
- 3 cups confectioners' sugar
- Boiling water
- 1 teaspoon vanilla extract
- 2 ounces (2 squares) unsweetened chocolate
- 1/2 teaspoon grated orange peel
To sugar add boiling water very slowly to make a smooth paste; add vanilla, melted chocolate and orange peel. Spread between layers and on top of cake.
This makes a delicious dessert if baked in two layers, iced, and spread with slightly sweetened whipped cream.

Icing can be formed into shapes such as flowers and leaves using a pastry bag. A pastry bag is an often cone- or triangular-shaped, hand-held bag made from cloth, paper, or plastic that is used to pipe semi-solid foods by pressing them through a narrow opening at one end. Aside from icings and frostings, pastry bags are commonly used to shape meringue and whipped cream, and to fill doughnuts with jelly or vanilla custard. Using icing to decorate cakes is commonly used with wedding cakes, anniversary cakes and birthday cakes.
Tapioca Vanilla Pudding
- 1/2 cup pearl tapioca or 3 tablespoons minute tapioca
- 1 quart milk
- 1 teaspoon melted butter
- 6 tablespoons sugar
- 2 eggs
- 1/4 teaspoon salt
- 2 eggs
- 1 teaspoon vanilla or lemon extract
Soak tapioca in cold water one hour; drain; add milk and butter, and cook in double boiler until tapioca is transparent. Add sugar and salt to beaten eggs and combine by pouring hot mixture slowly on eggs. Return to double boiler and cook just until it thickens. Add vanilla flavoring and serve hot or cold with cream.
